Chocolate balls 

I have enjoyed making energy balls for a few years now but the recipes I had were not very toddler friendly as they had crushed nuts in them and I was worried that the pieces would be too big for my little one. I tested out an adapted version that is more simple in terms of ingredients and tastes almost like pure chocolate. These balls are perfect as an afternoon snack or as a post-workout energy boost. And of course, they’re toddler-approved!

What you will need to make about 15 small balls:

2 Meedjoul dates

2 tbsp almond butter

2 tsp cacao powder

3 tbsp almond powder

Splash of water

Desiccated coconut for coating

How to make it?

Start by blending the dates in a food processor. When they have become soft and formed a sort of paste, blend all ingredients together, excluding the desiccated coconut, until a sticky dough has formed. Roll the dough into many small balls and one by one roll them around in the desiccated coconut.
I usually put them into the freezer for about an hour and then store them in the fridge in an air-tight container. If you end up making a big quantity you can easily keep them in the freezer and then defrost them in the fridge in small batches. I’m personally a big fan of cooking in advance and freezing for later.
